Research Question
“Where are American adults consuming the most sodium?”
Hypothesis
“Among U.S. adults, consuming restaurant-prepared sandwiches, hamburgers, fries, and pizza items will be associated with higher sodium intake compared to consuming store-bought versions of the same food categories and preparing food at home.”
Literature Review
Most of the sodium American adults eat is not added at the table. It is already in the food by the time it is bought or served. Keast and Guenther used National Health and Nutrition Examination Survey (NHANES) data collected from 2009 to 2018 to compare how much sodium store bought and restaurant prepared foods each contribute to American diets, and to work out where a reduction would have the greatest impact.1 They argue that lowering the sodium in a small number of widely consumed foods, including lunch meat and restaurant prepared pizza, would be the most effective way to bring population sodium intake down. That is what makes preparation method worth studying on its own. If sodium is concentrated in specific categories of prepared food, then where a person buys a sandwich or a pizza may matter more than whether they reach for the saltshaker.
Ahuja and colleagues established the baseline for that claim.2 Working through the United States Department of Agriculture (USDA) in collaboration with the Centers for Disease Control and Prevention (CDC), they analyzed roughly 5,200 samples of 125 commonly consumed foods collected from 2010 to 2013. They measured sodium content per serving and per kilocalorie and compared the results against Food and Drug Administration (FDA) sodium thresholds. 69 of the 125 foods exceeded the FDA limit for a healthy claim. Restaurant and fast food items performed especially poorly. The authors attribute that mostly to oversized portions rather than to the recipes themselves. They also documented substantial differences in sodium between brands of the same food type, which means the category a food belongs to does not by itself determine how much sodium it carries.
Khan, Khan, and Gadelrab approached the same problem from inside the menu.3 They compared matching McDonald's, KFC, and Pizza Hut items in the United States, Australia, Egypt, and India. They found that calories and protein correlate strongly with sodium content. More specifically, the meat and cheese portions of an item drive their sodium level more than the seasonings or sauces do. The authors conclude that sodium can be reduced by controlling portion size without sacrificing flavor. That finding shaped how I built my own comparisons. It predicts that the sodium in a burger or a sandwich should follow the bun, the meat, and the cheese rather than the condiments and it explains how the same brand can sell what looks like the same item at different sodium levels.
None of the three sources are without limits and those limits point at what my project adds. The Keast and Guenther study was funded by the Institute for the Advancement of Food and Nutrition Sciences which is a nonprofit funded primarily through industry membership dues. The organization reports no role in the study's design or interpretation and the paper was peer reviewed and published open access.1 The Ahuja data is specific to the United States and is now over a decade old, so more recent reformulation data would be needed to assess current trends.2 Khan and colleagues used a small, convenience based sample of four countries which limits how broadly their findings apply.3 More importantly, all three compare restaurant food against packaged or store bought food. None of them treat food prepared at home as a third condition. That is the gap this project addresses by holding the food category constant across a sandwich, a hamburger, fries, and pizza, and varying only who prepared it. The comparison tests whether the preparation setting is itself the variable driving sodium intake.

A Note on Data Accuracy
Every sodium value on this site was pulled from an official chain, manufacturer nutrition disclosure, or from USDA FoodData Central as of August 2026. Restaurants and food manufacturers update recipes and formulations on occasion. Before treating any of these numbers as final, it's worth checking them against the chain's current nutrition calculator or the product's current packaging.
Assembled items, like a homemade burger or a sandwich, are built by adding up the sodium in each individual ingredient. Every one of those ingredients is listed with its own citation. Each USDA link below opens the nutrient page for one specific food record. The USDA publishes those values per 100 grams, so the gram portion used is printed alongside every ingredient. Wherever USDA lists an official household portion for a food, that is the portion used. For example, one hamburger roll at 44 grams or one dash of table salt at 0.4 grams. Salt added during home cooking is never assumed as “light salt”. It appears as its own line with its own source, so the homemade totals are not perfect. One note on the USDA links: because FoodData Central is a single page application, its per food pages may report an HTTP 404 status to automated link checkers while still opening normally in a browser.
